Blueberry Muffins

Blueberry muffins made with higher protein baking mix! Double up your batch and freeze for future breakfasts or snacks. I like to have these on hand for pre and post workouts, an easy snack, and perfect for a night cap when you want something sweet! Enjoy hot or cold - they are great both ways :)

Protein: 5 grams
Carbohydrate: 16 grams

Ingredients
2 cups Kodiak Cakes mix or other higher protein pancake/baking mix
2 cups water (can substitute milk if desired - this can add more protein!)
1 teaspoon vanilla extract
¼ cup maple syrup (can sub for another sweetener).
¾ cup blueberries (can substitute any berry; fresh or frozen)
Preparation
Heat oven to 350 degrees. Prepare a muffin tin pan with liners or spray with cooking spray.
Add mix, water or milk, vanilla and maple syrup to a medium bowl and stir well to combine.
Fold in blueberries and pour evenly into muffin tins.
Bake for 15 minutes or until a toothpick inserted comes out clean.
