This recipe is great for meal prep - make and assemble ahead of time, freeze and pop in the microwave or toaster oven the morning you need them.
Ingredients
8 slices bread (or 4 bagels, English muffins or rolls, sliced)
4 whole eggs
12 tbsp egg whites
2 cups baby spinach
4 ounces ham, turkey or sausage patties
4 slices provolone, Swiss, cheddar or Gouda cheese
Condiments of choice
Preparation
Heat your oven to 350 degrees F. Spray an 8x8 inch baking dish with cooking spray.
Mix eggs and egg whites until well blended. Season with salt and pepper. Add spinach and stir well to combine.
Pour mixture into the prepared baking pan and bake for 20-25 minutes or until the eggs are set.
While eggs are baking, toast your bread, bagels or English muffins.
Once eggs are finished baking, allow to cool slightly, then cut into 4 even pieces.
To assemble your sandwiches: Place half a slice of cheese on bottom half of your sandwich, 1 egg slice, 1 ounce of turkey, ham or sausage, preferred condiments, other half slice of cheese and bread top.
If planning to freeze, allow eggs to cool completely before assembly. Assemble per above, wrap in parchment paper and freeze in zipper top bags. When ready to eat, heat in microwave or toaster oven until heated through.
